Executive Chef and owner Apolonio (Polo) Mojarro has achieved the American dream. He moved to the United States when he was 16 years old from Zacatecas, Mexico and went from working in the fields of California wine country to becoming the Executive Chef of the World Famous Ta-boo Restaurant on Worth Avenue in Palm Beach, Florida where he worked for 14 years.

Polo and wife/co-owner Debra along with children Alexa and Sebastian, opened Bistro 107 in February 2006 and they have received excellent reviews from food critics and local alike.
